Cooking a Prime Rib - Reverse Sear (Medium Rare)

Pull out the roast the night before.

Uncover the roast and place on a baking tray on top of a rack. Season generously with salt and pepper.

Place roast in fridge uncovered. This will help dry out the outside of the roast and get it ready to roast.

Place roast in 250 degree oven for a long time.

Cooking times will vary depending on size but a 3 rib roast will take around 3.5 hours to get to the magical 125-130 degree internal temp we're after (Medium Rare).

Full rib roasts could take upwards of 6 hours so plan ahead!

Once you take out the roast, tent it for 30-45 min. This will redistribute the juices and allow it to continue cooking into the perfect medium rare temperature.

Roast is just about cooked, let's get some colour on it.

Once you take your roast out at 125-130, set your oven to 550 or as hot as it goes.

Take off the tin foil and roast that roast at 550 for about 10 min. Keep an eye on it, you want it to sear and get some beautiful color but you certainly don't want to burn it.

No need to let it rest with this method, its ready to carve! Enjoy!
PRO TIP - As you carve the roast, sprinkle some coarse salt (like a Maldon or other flaked salt) on the face of each steak for extra flavour.
